This is a super easy one....cut up chicken breasts, 2 cans of white kidney beans (or cannelini as they are called here in Aus), a jar of green salsa, a small tin of chopped chillies, a small onion chopped and some chopped up green bell pepper. Serve with rice (I use a mix of brown & white), can also add some lowfat mexi-cheese or low fat plain yogurt (I love the greek style). Super easy! Cheers!

Hey Ana! This one is SOOOO EASY; Dump about 4 frozen or fresh boneless skinless chicken breast in the crock pot and then cover with salsa. 1 big jar or 2 small jars, even the cheap kind from walmart is good!! Let it simmer all day while youre at work, or while your away. Stir occassionaly and it will come out just like shredded chicken or pulled pork! That is IT!! SO EASY AND HEALTHY. Serve with rice.
